Leave piazza dei Sette Angeli keeping the old Cassaro behind. A clearing will open up on the right: shaded by a large tree, you will find two gates: it is a sfincione factory, one of the Palermo streetfood specialties.


The doors will most probably be closed: to enjoy a warm sfincione here you will have to stop by in the middle of the night, when the skilful bakers are scrambling to produce enormous quantities of sfincioni that will be sold during the day around the city.

Can you tell me which of these is a sfincione? If you are from Palermo you will have no problem answering. If you are a visitor, don’t rush to look for it on the internet, ask around instead!
